Big Jim’s BBQ – Korean Short Ribs

So beef is expensive right ?!?!
Tri tip is almost $10.00 a lb 😁
You can find beef short ribs for around $5.00 a lb.These will melt in your mouth I started to buy Korean BBQ sauce (years ago) but this way is so much flavorful and the secret is using pears !
You will need ;
2 – 3 lbs of beef short ribs, trimmed of excess fat. Rinse
1 large onion pureed
7 garlic cloves, minced
2 pears peeled, cored, and pureed
2 tsp worth of fresh ginger, minced
4 tbsp soy sauce
2 tbsp rice wine
2 tbsp brown sugar
1 tbsp honey
1/2 tsp red pepper
½ tsp ground black pepper
1 tsp sesame oil
1 tbsp toasted sesame seeds
Ok ! Two cooking methods
To prepare the marinade, cut all the fruit from the cores of the pears. In a blender or food processor, combine pears and all other ingredients except the short ribs, sesame seeds. Blend until smooth.
Transfer marinade to a large bowl and stir in sesame seeds.
Dip each rib slice in marinade and place it in a container or zip lock bag. Pour remaining marinade over the beef and place it in the refrigerator.
Marinate beef for at least 3 days
Each day move around ribs to ensure beef is evenly marinated.
Heat grill to med high and place ribs on grill they cook fast about 2-3 min on each side depending on thickness.
2) stove top
Heat stove to medium heat. Put the marinated ribs in a Dutch oven or heavy pot. Add and 1 cup of water and all marinate juice
Cover and cook over medium heat for 30 minutes.
Give it a good stir and turn down the heat. Cover and simmer for 20 minutes.
Open the lid and turn up the heat. Keep stirring and cooking until the ribs turn shiny and the juice is almost gone. About 15-20 min
Add green onions for color and transfer to a serving plate. Sprinkle with toasted sesame seeds.
