Big Jim’s Mango fruit salsa with oven baked Halibut

You will need ;

  • 2 cups mango chopped in small cubes
  • 1 cup tomato, chopped in small cubes
  • 1/4 cup green pepper
  • 1 small jalapeƱo diced
  • 1/4 cup red onion diced
  • 1/4 red pepper diced
  • 1/4 cup cilantro, chopped finely
  • 2 tbsp freshly squeezed lime juice
  • Freshly ground salt and pepper to taste
  • Avocado (optional)

Fish rub;

  • 4 tablespoons olive oil
  • 1 pound halibut
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon oregano
  • 1/4 teaspoon cumin

Mix all chopped ingredients for tropical salsa in a large bowl, add lime juice, add salt and pepper to taste. Set aside to let the juices combine together. Then heat your salsa for 4-5 on med high to combine flavor. To prepare seasoning for the fish, mix salt, pepper, paprika, oregano, cumin in a small bowl. Then coat your fish yum yum !!

Heat oven at 400 F. and place fish on pan with your fish rub on your fish. Cook your fish 6 min on each side I like to broil on the flip side for 5-6 min on high( do not leave your fish or it will burn) let you fish sit for 4-5 min before serving make sure your fish is cooked and flaky. Top with your mango salsa ( I like a big spoonful)

Plate with your favorite sides my kids loved rice, stewed tomatoes and French bread with a salad to start. So this was tonight dinner !! Enjoy !!
